I keep seeing people turning their backs to the enemy team while running away to save or whatever as if the enemy team can't come after you if you don't look at them.

You run at the same speed forwards and backwards. Keep your crosshair in their general direction at least so you can shoot back if they give chase! If you W-key in a straight line from the site you're asking to get shot in the back.
